Key lime pie



         


Key lime pie is a dessert made of lime juice, eggs, and sugar in a pie or graham cracker crust. It is not a proper pie in that it is not baked, rather the mixture is frozen. This makes it a popular summer dessert. Since proper key lime pie requires raw eggs many restaurants in North America have recently stopped serving the dish out of fears of liability. The dish is usually said to be named after the small limes of the Florida Keys, which are less tart than the more common limes seen year round in most U.S. grocery stores.
