Creaming method



         


The creaming method is a traditional, standard process for baking. This typically involves beating butter and crystalline sugar (like granulated white sugar) together until "light and fluffy" and the mixture has increased in volume. This is known as "creaming the butter," or "creaming the butter and sugar."

Recipes following the creaming method will start at this point and then continue in a standard manner. The wet ingredients are added next, followed by the combined dry ingredients--typically in three separate additions. Recipes indicating the creaming method should give individualized instructions for baking.
