Cassoulet is a rich stew or casserole originating in the south-west of France, containing meat (typically pork sausages, mutton or goose), and white haricot beans. Numerous regional variations exist, the most notable being from Castelnaudary, Carcassonne and Toulouse, which is cooked using spicy Toulouse sausage.
However, cassoulet is available throughout France: tin cans of cassoulet are sold in all supermarkets.
